Quick & Easy Soan Papdi Recipe / Perfect Sweet For Diwali

         Recipe:

         Ingredients:

  • 1 cup Gram flour (Besan)
  • 1 cup All-purpose flour (Maida)
  • 2 cups Sugar
  • 1 cup Ghee (clarified butter)
  • ¼ cup Water
  • ½ cup Milk
  • ½ tsp Cardamom powder
  • Chopped pistachios and almonds (for garnish)

Preparing the Mixture:

  • Step 1:

    • Heat ½ cup ghee in a heavy-bottomed pan and add the gram flour and all-purpose flour.
    • Roast on a medium flame, stirring constantly until the mixture turns golden brown and gives a nutty aroma. This step may take 10-12 minutes.
    • Keep this mixture aside to cool slightly.

2. Making the Sugar Syrup:

  • Step 2:

    • In another pan, combine sugar, water, and milk.
    • Stir continuously until the sugar dissolves and forms a thick syrup.
    • Cook the syrup till it reaches a hard-ball consistency (about 2 string consistency) on medium heat. You can test it by dropping a small portion into water—if it forms a solid ball, it’s ready.

3. Combining the Syrup and Mixture:

  • Step 3:

    • Pour the sugar syrup into the roasted flour mixture while it's still warm.
    • Stir quickly to mix everything well. The mixture will come together but remain soft.

4. Shaping the Soan Papdi:

  • Step 4:

    • Quickly pour the mixture into a greased tray and spread it evenly.
    • Once it cools slightly, use your fingers to gently pull apart the mixture into layers, giving it the traditional flakiness.
    • Press chopped pistachios and almonds on top for garnish.

5. Cutting and Serving:

  • Step 5:

    • Let it cool down completely before cutting it into squares or diamond shapes.
    • Your Soan Papdi is now ready to serve!
