Recipe for Basque Burnt Cheesecake

Ingredients

  • 500g (2 cups) cream cheese, softened
  • 1 ¼ cups (250g) granulated sugar
  • 4 large eggs, at room temperature
  • 2 cups (480ml) heavy cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1/4 cup (30g) all-purpose flour
  • Butter or parchment paper for lining

STEPS

  1. Preheat Your Oven: Set your oven to 400°F (200°C). Line a 9-inch springform pan with parchment paper, making sure the paper comes up at least 2 inches above the edges.

  2. Make the Batter:

    • In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
    • Add the eggs one at a time, mixing well after each addition.
    • Pour in the heavy cream, vanilla, and salt, and mix until the batter is smooth and creamy.
    • Sift the flour into the mixture and fold it in gently until just combined.
  3. Bake the Cheesecake:

    • Pour the batter into the prepared pan, smoothing the top.
    • Bake for 50-60 minutes, or until the top is dark brown (even burnt-looking) and the center still has a slight jiggle.
  4. Cool and Serve: Let it cool in the pan to room temperature. For the best texture, chill it in the fridge for a few hours or overnight before slicing and serving.
